How to Make (Quick & Easy)Almond Milk
I got hooked on homemade almond milk 2 years ago. I couldn’t believe the difference in taste and consistency from the stuff at the store! When we cut out dairy a couple of years ago, not having half and half for our coffee was the real heartache….not that cheese was easy to ditch, but half and half….nothing, just nothing compared. Until homemade almond milk! I was elated to find that I could make the almond milk rich and creamy, just perfect for coffee. And I got really good at soaking the almonds for hours, then blending and squeezing through my tired old nut milk bag, just for that perfect coffee creamer. Alas, the day came that I didn’t soak the almonds ahead of time and we were facing black coffee. Maybe you’re not a coffee person, but if you are and you like it a specific way, you understand. Don’t mess with my coffee! I’m serious, this is a very important part of my day. This is when I found the cheater almond milk recipe that changed my life.
This is so simple, it’s almost embarrassing. It works for anything that calls for milk, too. I even used it to make Swedish Meatballs on Christmas Eve- as is our tradition. I like my milk on the NOT sweet side, but feel free to throw a few dates in to sweeten it up or even a bit of honey.
Stop here if you don’t own a Vitamix. Just kidding, but you may find the need to invest in one at some point. Grab your blender, some Almond Butter (I like the Costco Organic Raw Almond Butter) ,some vanilla and salt and add filtered water. That’s it. Blend it. Use it. Here’s how I make my almond milk:
Put all ingredients into a blender
4 Tablespoons Raw Almond Butter
1/2 tsp Vanilla Extract
a pinch of Salt
2 Cups Filtered Water
Blend till smooth. I love to spoon off the foam and make a latte when it’s fresh. It’s so delicious and tasty. Enjoy!
